The kids in the neighborhood would wait for the sun to set and then we would run to our homes, grab a glass jar from the pantry, poke holes in the lid with a tin can opener, place grass inside the jar and rendezvous in the backyard. We would run around in the darkness catching ‘Lightning Bugs.’ That’s what we called them. Sometimes called ‘Fireflies.’ We thought it was so cool how the wings lit up. What other insect does that? They were easy to catch and before going inside for the night we would release our captives. Daylight seemed to last forever during those summers when our parents permitted us to play outside after dinner. Oh, what freedom!

Watermelon is a summertime fruit which I associate with memories from my childhood summers. My mother would purchase peaches, plums and pears from the fruit stand but not watermelon. Refrigerators were not as spacious as today’s units so space was likely the reason. Although, Mrs. Heine across the street would occasionally buy a large watermelon, slice it up on hot summer evenings and dole out wedges to the neighborhood kids. We were so thrilled to see such a gigantic fruit! I loved the taste but didn’t like picking out the seeds. Us kids would debate whether we only had to pick out the black seeds but could swallow the white seeds. But if we did there was the fear a watermelon would grow in our tummies…ooooohh yuk! So, all the kids would sit there and one-by-one dig out ALL the seeds before taking a juicy bite of our watermelon wedge. While decorating these cookies, I couldn’t help but reminisce about those wonderful summers so long ago.

Watermelon Cookies
Round Shortbread Cookies (cut in half)
Royal Icing for outlining tinted Green with AmeriColor Leaf Green
Royal Icing for outlining tinted White with AmeriColor Bright White
Royal Icing for outlining and flooding tinted Red with AmeriColor Super Red
Royal Icing for outlining tinted Black with AmeriColor Super Black

Hint:  For red, add several drops of Americolor Super Red until dark pink color is achieved. Color will dry red.
         For black, add several drops of Americolor Super Black until dark gray color is achieved. Color will dry black.

Roll out dough and cut shapes with round cutter. Divide circles in half with pizza cutter or small knife.
For some cookies, scoop out with a scalloped cutter. Bake cookies.
Outline curved side of cookie with #3 tip in green icing. Let sit 15 minutes.
Outline immediately next to green line with #3 tip in white icing. Let sit 15 minutes.
Outline straight side of cookie with #2 tip in red icing.
Flood cookie with red icing. Let sit 30 minutes.
Pipe seeds with #2 tip in black icing. Let cookies dry overnight.

  4. These are DARLING! I like the way you mix in ones with a bite taken away! And I had forgotten all about the black seeds that spoiled watermelon eating for me too! So nice to have the seedless ones now - what will this world come to? I hope not a machine that will eat our cookies for us!
