I baked these cookies for my cousin and her husband. They recently became grandparents for a second time and are Nana and Grandpa to their two granddaughters. My cousin is very proud of our Irish heritage and the color scheme at her wedding was kelly green. So to honor their new granddaughter, the choice of color for these cookies had to be ... you guessed it ... Kelly Green!

Outline cookie (except beak) with #3 tip in pink icing. Let sit 15 minutes.

Flood cookie with green icing.

Pipe dots with white icing. Let sit 30 minutes.

Outline cookie again (except beak) with #3 tip in pink icing

Pipe beak and add dot for eye with pink icing. Let dry overnight.

CHOCOLATE CHIP COOKIES/ The Original


Are your Chocolate Chip Cookies tough and crumbly? Do you want soft and gooey cookies? Do they go flat when baked? Do you wonder why when you followed the recipe to a tee? I will tell you my two secrets to baking the best Chocolate Chip Cookies.


You know the recipe printed on the back of the Nestles Semi-Sweet Chocolate Morsels bag entitled … The Nestle Original Toll House Chocolate Chip Cookies? Well, that is not the original cookie recipe. That recipe calls for 1 cup (two sticks) of butter. All that butter is the reason the cookies go flat. In the oven the butter melts like a snowman on a sunny day and the cookies lose their shape. In the 1960's the recipe on the Nestles bag listed these two ingredients: ½ cup butter and ½ cup shortening. Crisco shortening is a vital ingredient and somewhere along the way the food police removed it from the recipe. The shortening is what helps the cookie keep its shape. I would venture a guess that the original and authentic Toll House Cookie recipe from 1936, when the recipe was created likely contained lard.


I told you one secret – Crisco. Do you want to know my other secret? Most bakers over-bake their chocolate chip cookies. My Mom taught me her secret which is to remove the cookies from the oven when you think they are not quite finished baking. Instead of baking for another minute or two, remove them from the oven when the edges are just slightly golden and the middle is pale. Leave the cookies on the cookie sheet for at least 5 minutes before removing to a cooling rack. The cookies will finish baking on the hot baking sheet and set. This is how to achieve perfect chocolate chip cookies. Not only will your cookies look mouth-watering, your cookies will taste scrumptious.


Chocolate Chip Cookies
2¼ cups Flour
1 tsp Baking Soda
1 tsp Salt
½ cup Butter (1 stick), softened
½ cup Crisco Shortening
¾ cup Sugar
¾ cup Brown Sugar
1 tsp Vanilla
2 Eggs
2 cups Semi-Sweet Chocolate Chips (12 oz. bag)

In a separate bowl mix Flour, Baking Soda and Salt. Set aside
Cream Butter, Shortening, Sugar, Brown Sugar and Vanilla. Add Eggs one at a time.
Add flour mixture gradually. Stir in Chocolate Chips.
Bake at 375 for 7 to 9 minutes until edges are slightly golden. Cookies will look undercooked.
Makes 5 dozen cookies.

IRISH SHAMROCK COOKIES/ Office Mates



You know how it is with some people? Years can go by without seeing one another but when chatting on the phone or reuniting in person, the years melt away. Every year I catch up with two of my former co-workers and recently we met for lunch. It was as if we were back at the office we shared for nearly 17 years. Even though it’s been a long while since we all worked together, the conversation was instantaneous and nonstop as we picked up where we left off.

My former boss, Stuart loves being Grandpa to his four grandchildren. He brought photos and updated us on their latest musical and sports activities. The oldest, twins are now driving. When we first met 23 years ago, his children were single and are now the parents of teenagers.

Jill and I started at the firm the same month. She was fresh out of law school and a newlywed. Every few years she would come in with a baby stroller, diaper bag and a blonde-haired, darling bundle of joy. Those little ones are now in high school and college. Where does the time go?

It was wonderful to get together and a pleasure to have spent my workdays with these two dear friends, who shared joy in good times and provided comfort in sad times. I’m grateful for their lasting friendship and can’t wait until our next reunion.

It had to be Shamrock Cookies for my office mates who share a March birthday.

Outline half of cookie with #2 tip in green icing.

Flood half of cookie with #2 tip in green icing.

Outline other half of cookie with #2 tip in orange icing.

Flood half of cookie with #2 tip in orange icing. Let dry overnight.

Apply gold luster dust with paintbrush to orange side of cookie. Let dry 30 minutes.

POLICE COOKIES/ Thin Blue Line



The ‘thin blue line’ is the symbol of law enforcement officers; those dedicated men and women who put their lives on the line daily to serve and protect the citizenry.

You know that sick feeling when visible in your rear-view mirror is a police car with flashing lights signaling to pull over. Busted! With the knowledge that exceeding the speed limit is a habit I usually get away with, at that particular moment the police officer, or deputy as called in my county, is not my favorite person. You know what I’m talkin’ about. It’s easier to blame the officer for getting nabbed instead of taking responsibility. These public servants with moderate salaries work crazy hours, holidays and often miss family functions. If ever a victim of crime, who are you going to call? Ghostbusters … heck no, the police! So the next time the law catches up to you, just as we perform our duties at work, the officer is simply doing his or her job.
 
My niece designed these cookies for a retirement party of a police officer leaving the force after 30 years of service. Together we baked and decorated over 120 cookies. This is a simple design but the real challenge was making black icing. Decorating 10 dozen cookies takes oodles of icing and to achieve a true black requires lots of AmeriColor Super Black gel food coloring.

With a spatula mark guidelines before baking.

Pipe lines and outline cookie with #2 tip in black icing.

Flood first and third sections with black icing. Let sit 30 minutes.

Flood middle section with blue icing. Let dry overnight.
