PECAN COFFEE CAKE/ My Uncle's Favorite

Every time I bake this cake it brings back happy memories of my Uncle Len. My mother would bake this cake and a spice bundt cake [future post] when we visited our cousins, or they came to visit us. This was Uncle Len's absolute favorite coffee cake! He was the husband of my Dad's sister and my Godfather. He was a kind man with a magnetic personality who drew others to him. He was my favorite uncle and he gave the best hugs. I was only 17 when we lost this special man who died young, but our warm memories have not allowed him to stray too far from our hearts and minds.

I’ve carried on Mom's tradition of making this cake for guests because it is so delicious. It can be made with pecans or walnuts or if you prefer without nuts, just add the cinnamon/sugar mixture. Once again, the secret ingredient in this recipe is sour cream and makes for a moist and tasty cake.

Pecan Coffee Cake
1 Cup Butter (2 sticks), softened
2 cups Sugar
2 Eggs
1 Cup Sour Cream
½ Tsp Vanilla
2 Cups Flour
1 Tsp Baking Powder
¼ Tsp Salt
4 Tsp Sugar
1Tsp Cinnamon
1 Cup Chopped Pecans or Walnuts
Ricotta Cheese can be substituted for Sour Cream

Grease and flour a tube pan
In a separate bowl mix Flour, Baking Powder and Salt. Set aside.
Cream Butter and Sugar until light and fluffy.
Add Eggs one at a time. Add Sour Cream and Vanilla.
Fold in flour mixture.

In separate bowl, combine 4 tsp Sugar with Cinnamon and Pecans or Walnuts

Spoon 1/3 of batter into a tube pan.

Sprinkle with 3/4 of pecan mixture. 
Spoon in remaining batter and sprinkle with remaining pecan mixture.

Bake at 350 for 60 minutes.
