BUTTERFLY COOKIES/ Artsy Wings

Whenever I see butterflies on anything, I think of my cousin, Carol. She has always had a thing for butterflies. For others, it may be snowflakes, turtles, seashells, angels, etc. Over the years, she has accumulated many things butterfly-related, mostly as gifts from those who know her love of butterflies. A few years ago, she asked me to inscribe a poem in calligraphy for her new granddaughter. As a surprise, I added a watermark of a butterfly and she loved it. So naturally, as I decorated these cookies Carol was on my mind. She is a kind, energetic, independent and loving mother and grandmother. She is also a devoted daughter, sister and friend who looks out for everyone. I have plans to visit her this summer and I am definitely going to bake her some butterflies ... no other cookies would do!

The butterfly cutter is so versatile. There are endless color and design possibilities to create various looks to the butterfly. I wanted a southwestern look for these cookies so I chose terracotta for the background color and turquoise, along with yellow for the detail colors. Terracotta reminds me of clay roof tiles on stucco homes and turquoise of the popular jewelry in the southwestern part of the United States.
