TURTLE COOKIES/ Preppy Turtles



Our grand-nephew and grand-niece, siblings who are ages 1 and 4, celebrated their birthdays with a joint party in the park. It was a beautiful spring day at Yards Park in Washington, DC along the Potomac River. There are oodles and oodles of discoveries yet to come but on this day the little ones frolicked on the grass, crawled through the tube and flew kites with their Dads. What a great way to celebrate their first big year of life!

These turtles are the perfect cookie for these one-year-old lads and soon-to-be toddlers. I had to go with preppy colors for these future heart-throbs.

Outline cookie with #3 tip in dark blue icing. Let sit 30 minutes.

Flood cookie with bright green icing.

Draw arc on back of turtle with dark blue flood icing.

Pull with toothpick to make turtle shell design. Let sit one hour.

Add eye and number 1 with #2 tip in dark blue outline icing.
Outline cookie with #3 tip in dark blue icing. 

Let dry overnight.

CHOCOLATE MASCARPONE COOKIES/ Chocolate Sandwiches


Celebrity chef, Giada DeLaurentiis uses mascarpone in many recipes. It is an Italian sweet cream cheese and the way she describes it sounds so delicious. So, I finally purchased an eight ounce tub. I searched the web for a cookie with that ingredient and found Chocolate Sandwich Cookies with a Mascarpone filling. Yum! Bake up a batch and tell me what you think?

Chocolate Mascarpone Sandwich Cookies 
1 Cup Butter (2 sticks), softened
1 Cup Sugar
1 Egg
1 Tsp Vanilla
2 Cups Flour
½ Cup Cocoa Powder
½ Tsp Baking Soda
½ Tsp Salt
 
In a separate bowl mix Flour, Cocoa, Baking Soda and Salt. Set aside.

Cream Butter and Sugar. Add Egg and Vanilla. Mix well.

  Gradually add dry ingredients. Do not overmix.
Divide dough in two halves, wrap in plastic and chill for 2 hours.

 
Roll out dough on floured surface. Cut shapes.
Hint: Flour will disappear from cookie during baking.
(I used the blossom cutter but you can use any cutter suitable for a sandwich cookie.)

 
Bake at 375 for 8-10 minutes until dry on surface.
Makes 30 medium-sized cookies; 15 sandwich cookies.

Mascarpone Filling
8 oz Mascarpone Cheese
2 Tbsp Confectioner’s Sugar
Mix Mascarpone and Confectioner’s Sugar until well blended.

To assemble, turn cookie upside-down and spread with 1 teaspoon of filling.
Top with another cookie. Repeat with remaining cookies and filling.
Sprinkle cookies with Confectioner’s Sugar. Store in refrigerator.

CUPCAKE COOKIES/ Who Wants Cupcakes?



The cupcake cookies are one of my favorites. They are a great cookie for beginners and the cupcake is a large cutter with easy curves. There does not have to be an occasion to make these but they certainly make a sweet birthday cookie. After all, who doesn’t like cupcakes? Depending on the icing colors, these cupcakes can look very masculine or feminine. For these I chose one of my favorite color combinations, pink and gray.

These cookies were made for a very dear friend who is an angel on earth … a real life Florence Nightingale. Everyone loves Laura! She spreads sunshine everywhere she goes and enriches the lives of those around her. Along with a large circle of friends, she is also a wife, mother and grandmother to her three young grandchildren. For her birthday, I thought what better way to tell a friend how much she is appreciated than with a sweet treat! So, when the next birthday in your crowd of friends rolls around, bake up a batch.

Royal Icing for outlining and flooding tinted Light Pink with AmeriColor Deep Pink and AmeriColor Fuchsia
Royal Icing for outlining and flooding tinted Gray with AmeriColor Super Black

Hint: Just a smidge of Super Black on a toothpick will create Gray.

Outline bottom half of cookie with #2 tip in gray icing.

Flood bottom half of cookie with gray icing.

Add dots with light pink flood icing.

Pull dots with toothpick to create heart designs. Let sit 30 minutes.

Turn cookie and outline with #2 tip in pink icing.

Flood with pink icing. Let sit 30 minutes.

Add 4 swirly lines with #2 tip in pink outline icing. Let dry overnight.

BLOSSOM COOKIES/ Bloomin' Pink



Spring has sprung in Washington and the cherry blossoms are finally blooming. Now for the first time in a month the local weather forecasters can have some peace. Every night the interrogation would begin from their co-anchors. “When are the cherry blossoms going to bloom?” “Are the blooms going to coincide with the Cherry Blossom Festival?” They are weather forecasters people, not psychic! My fellow Washingtonians know what I'm talking about. Every spring the local meteorologists are hounded about the peak date for the cherry blossoms. They do a fantastic job coming up with a target date each and every evening to quiet the peanut gallery. The cherry blossom trees are a little unpredictable and seem to have a mind of their own. They were predicted to bloom two weeks ago but the buds do not like cold temperatures. Well, the temps rose to the upper 80s earlier this week and the blossoms made their grand entrance. The warms temps were just what the cherry blossom trees were waiting for to burst into color. The pink clusters along the Tidal Basin are breathtaking. If you do not like crowds, watch the cherry trees on the local news every night this week, until the next rain blows the blossoms away!

Hint: Just a smidge of Wilton Ivory mixed with Americolor Lemon Yellow will create Soft Yellow.

Outline cookie with #2 tip in dark pink icing. Let sit 15 minutes.

Flood cookie with medium pink icing.

Squeeze large dot of yellow flood icing onto center of cookie.

Pull with toothpick to create center of blossom. Let sit 30 minutes.

Outline petals of cookie with #2 tip in dark pink icing.

Squeeze small dots of yellow flood icing onto center of cookie. Let sit 15 minutes.
(Flood icing will spread. Leave ample space between yellow dots).

Pipe small dots with #2 tip of dark pink outline icing onto center of cookie. Let dry overnight.

CHERRY BLOSSOM COOKIES/ Springtime in DC



The locals and sightseers alike anxiously await springtime in Washington, DC to glimpse the Cherry Blossom Trees, which line the Tidal Basin next to the Jefferson Memorial. Tourists flock into the city from all parts of the world to view the dainty blossoms which are at their peak in April. Cherry Blossom season is celebrated with a week of festivities from a parade along Pennsylvania Avenue to kite-flying at the Washington Monument. There’s even a Cherry Blossom Queen. The blossoms vary from white to pale pink to medium pink and are a stunning sight signifying spring is here.
 

These magnificent trees were a gift from Japan to the United States in 1912. Japan initially shipped mature trees with the thought they would flower more quickly. However, the trees arrived with disease and bugs and were subsequently destroyed. So, Japan shipped a new bunch of young trees. There are a total of 3,000 trees planted in three varieties and 100 of the originals trees still remain. (Source: PBS-TV)

Add flowers with #2 tip in light pink icing. Let dry overnight.
