MINT CHOCOLATE CHIP COOKIES/ Irish Twist



Usually, I’m a purest when it comes to the traditional chocolate chip cookie; no white chocolate, no milk chocolate, no butterscotch chips, only semi-sweet chocolate chips and definitely no nuts. But in March everything has a touch of green, so I strayed and added some Irish to America’s favorite cookie for St. Patrick’s Day. These Mint Chocolate Chip Cookies add color along with a burst of mint in each bite. The batter tastes great too! So get in the spirit of the season where everyone is Irish and bake a batch for your St. Pat’s Day celebration!


Mint Chocolate Chip Cookies
2¼ cups Flour
1 tsp Baking Soda
1 tsp Salt
½ cup Butter, softened
½ cup Crisco Shortening
¾ cup Sugar
¾ cup Brown Sugar
2 Eggs
1 tsp Vanilla
1¼ cups Semi-Sweet Chocolate Chips
¾ cup Mint Chips

In a separate bowl mix Flour, Baking Soda and Salt. Set aside.
Cream Butter, Shortening, Sugar, Brown Sugar and Vanilla.
Add Eggs one at a time. Gradually add flour mixture.

Stir in Chocolate Chips and Mint Chips.
Bake at 375 for 8-10 minutes.

Remove from oven when slightly golden on edges. Cookies will look underdone. Makes 5 dozen.

  1. Joan...these look fabulous! I used to be such a purist about my chippers, that I could just about eat the cookie alone with nothing in it! (I just love the flavor of that soft chewy cookie!) But I think it's fun now to add different ingredients to that base. And mint chips give the perfect flavor and color for St. Patty's day! These are perfect! : )

    1. The mix of the semi-sweet chocolate and mint was very tasty. The brand of the mint chips I used is Guittard. I'm not sure where I purchased them. Keep looking; you may stumble upon them. Thanks for leaving a comment.
